Ingredients:

  • 1 tablespoon Melgarejo Hojiblanca EVOO
  • ½ teaspoon mustard seeds
  • 6 fresh curry leaves
  • ½ cup salted roasted peanuts
  • ¼ cup dried split chickpeas
  • 1 lb green beans, trimmed and cut into 2-inch pieces
  • Juice from 2 limes
  • 1 tablespoon Cayenne Fused Olive Oil
  • 2 tablespoons fresh chopped cilantro
  • Kosher Salt
  • ½ cup grated coconut

Instructions:

  1. Prepare Ingredients:
    • Heat EVOO in a large saucepan over medium heat.
    • Add mustard seeds, curry leaves, peanuts, and chickpeas. Toast until mustard seeds start to crackle.
  2. Cook Green Beans:
    • Add green beans to the saucepan and sauté until almost tender, about 4 minutes.
  3. Add Flavors:
