Spicy Turkey Picadillo Stuffed Mushrooms are a delicious twist on traditional stuffed mushrooms. Packed with savory ground turkey, spices, olives, and raisins, these mushrooms make a flavorful appetizer or main dish.

Ingredients:

  • 1 lb ground turkey
  • 12-16 large white or cremini mushrooms, stems removed and reserved
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 jalapeño pepper, seeded and minced (optional, for extra spice)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup tomato sauce or crushed tomatoes
  • 1/4 cup chopped green olives
  • 1/4 cup raisins
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add minced garlic, chopped red bell pepper, and jalapeño (if using). Cook for another 2-3 minutes until peppers are softened.
  4. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in ground cumin, ground coriander, smoked paprika, salt, and pepper. Cook for 1-2 minutes until spices are fragrant.
  6. Add tomato sauce, chopped green olives, and raisins. Stir well to combine and simmer for 5-7 minutes until flavors meld together and the mixture thickens slightly. Remove from heat.
  7. While the filling is simmering, prepare the mushrooms. Remove stems and finely chop them. Place mushroom caps on the prepared baking sheet.
  8. Spoon the turkey picadillo filling into each mushroom cap, pressing gently to fill.
  9. Bake in the preheated oven for 20-25 minutes, until mushrooms are tender and filling is heated through.
  10. Remove from the oven and garnish with chopped cilantro or parsley before serving.
