Spicy Pork Larb with Jalapeno Fused Olive Oil

Thai-inspired Pork Larb with Spicy Jalapeno Fused Olive Oil is a bold dish with ground pork, toasted rice powder, fresh herbs, tangy fish sauce, and lime dressing.

Ingredients:

  • 1 tablespoon uncooked sticky rice
  • 2 tablespoons Jalapeno Fused Olive Oil
  • 1 pound ground pork
  • 1/4 teaspoon sugar
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • 3 shallots, peeled and thinly sliced
  • 3 scallions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup mint leaves, chopped

Instructions:

  1. In a dry wok or pan over low heat, toast the sticky rice grains, stirring continuously until they turn golden and fragrant, about 10 minutes. Grind the toasted rice to a coarse powder using a mortar and pestle. Set aside.
  2. Place the wok or pan back over high heat until smoking hot. Add the Jalapeno Fused Olive Oil and the ground pork. Stir-fry until the pork is browned and cooked through.
  3. Add the toasted rice powder, sugar, fish sauce, and lime juice to the pork. Stir-fry for another minute to combine the flavors.
  4. Add the chili (if using), shallots, scallions, cilantro, and mint to the pork mixture. Stir-fry for one more minute until everything is well combined and heated through.
  5. Taste the larb and adjust seasoning as needed with more chili, sugar, fish sauce, or lime juice according to your taste preferences.
  6. Serve the Pork Larb with sticky rice, steamed jasmine rice, and/or lettuce leaves for wrapping.
