Grilled Chicken with Aji Verde features tender, juicy chicken breasts seasoned and grilled to perfection, served with a zesty cilantro-based Aji Verde sauce that adds a burst of fresh flavor to every bite. Perfect for summer grilling!
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
For Aji Verde:
- 1 cup fresh cilantro leaves, packed
- 1/2 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1 jalapeno pepper, seeded and chopped
- 2 cloves garlic, minced
- Juice of 1 lime
- Salt and pepper, to taste
Instructions:
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and olive oil.
- Grill the chicken breasts for 6-7 minutes per side, or until fully cooked through and grill marks appear. Remove from heat and let rest for a few minutes.
- Meanwhile, prepare the Aji Verde sauce: In a blender or food processor, combine cilantro, mayonnaise, sour cream or yogurt, jalapeno, garlic, lime juice, salt, and pepper. Blend until smooth and creamy.
- Serve the grilled chicken breasts with a generous dollop of Aji Verde sauce on top.
