STUFFED BAKED SALMON

Stuffed Baked Salmon is a savory delight featuring tender salmon fillets stuffed with a flavorful mixture of Gordal olives, sundried tomatoes, spinach, red onion, and Feta cheese, baked to perfection and served hot over a bed of rice.

Ingredients:

  • ¼ cup pitted Deliza Gordal Olives, chopped
  • 1 red onion, finely chopped
  • 4 oz chopped sundried tomatoes (about half a jar)
  • 3 oz spinach
  • ¼ cup Feta cheese
  • Salt and black pepper, to taste
  • 3 tablespoons Spicy Calabrian Pesto Infused Olive Oil
  • 4 (6 oz each) skinless salmon fillets

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil and set aside.
  2. In a bowl, mix together the chopped Gordal olives, red onion, sundried tomatoes, spinach, and Feta cheese.
  3. Cut a slit horizontally in the center of each salmon fillet to create a pocket. Rub the inside and outside of each fillet with Spicy Calabrian Pesto Infused Olive Oil. Season both sides with salt and black pepper.
  4. Stuff each salmon fillet with the olive, onion, sundried tomato, spinach, and Feta cheese mixture.
  5. Arrange the stuffed salmon fillets on the prepared baking sheet.
  6. Bake in the preheated oven for 30-40 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve hot over rice or your favorite side dish.
