This delightful shrub is a refreshing twist on the classic summer drink. Fresh blueberries are infused with lemon white balsamic vinegar and a touch of thyme, creating a flavorful syrup that can be enjoyed diluted with sparkling water.
Ingredients:
- 2 cups lemon white balsamic vinegar
- 1 cup fresh blueberries, crushed
- 2-inch sprig of fresh thyme (optional)
- 8 cups chilled sparkling water
Instructions:
- Infuse the Shrub: In a 1-liter mason jar or container, combine the crushed blueberries with the lemon white balsamic vinegar. If using, add the sprig of thyme. Cover the jar and refrigerate for at least 1 hour, or up to 4 hours. The longer it sits, the more pronounced the blueberry and thyme flavors will be.
- Strain and Store: Strain the infused vinegar into a separate container, discarding the blueberries and thyme sprig (if used). Store the shrub in a tightly sealed container in the refrigerator for up to one month.
- Assemble and Serve: Fill a glass with ice (optional). Add 1-2 tablespoons of the blueberry lemon-thyme shrub, depending on your desired sweetness level. Top with chilled sparkling water. Enjoy!
