Ingredients:

  • 2 small zucchini, sliced
  • 2 small yellow squash, sliced
  • 12 oz small cherry tomatoes, halved
  • 3 tablespoons Garlic Infused olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chopped fresh parsley
  • Salt and freshly ground black pepper
  • 1 cup (2.4 oz) finely shredded Parmesan cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Line a 13-inch baking sheet with parchment paper or aluminum foil.
  2. In a small bowl, whisk together the Garlic Infused olive oil, parsley, and oregano.
  3. Place zucchini, yellow squash, and tomatoes in a large mixing bowl. Pour the olive oil mixture over the vegetables and gently toss with hands to evenly coat.
