Grilled Chicken with Aji Verde

Grilled Chicken with Aji Verde features tender, juicy chicken breasts seasoned and grilled to perfection, served with a zesty cilantro-based Aji Verde sauce that adds a burst of fresh flavor to every bite. Perfect for summer grilling!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For Aji Verde:

  • 1 cup fresh cilantro leaves, packed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 jalapeno pepper, seeded and chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and olive oil.
  3. Grill the chicken breasts for 6-7 minutes per side, or until fully cooked through and grill marks appear. Remove from heat and let rest for a few minutes.
  4. Meanwhile, prepare the Aji Verde sauce: In a blender or food processor, combine cilantro, mayonnaise, sour cream or yogurt, jalapeno, garlic, lime juice, salt, and pepper. Blend until smooth and creamy.
  5. Serve the grilled chicken breasts with a generous dollop of Aji Verde sauce on top.
  6. Garnish with additional cilantro leaves if desired. Serve hot and enjoy!
