Grilled Salmon with Herb Vinaigrette

Ingredients:

  • 4 (10 oz) salmon fillets
  • 1 teaspoon Seasonello fine Sea Salt, divided
  • 1/2 teaspoon pepper

Fresh Herbed Mix:

  • 2 shallots, minced
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped thyme
  • 2 tablespoons chopped chives
  • 1 tablespoon finely minced garlic
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon sugar
  • 2 tablespoons fresh lime or lemon juice
  • 1/2 cup Portuguese Cobrançosa EVOO (Extra Virgin Olive Oil)

Instructions:

  1. Prepare the Grill:
    • Preheat the grill to medium-high heat. Clean the grill surface well and brush with oil to prevent sticking.
  2. Season the Salmon:
    • Sprinkle the salmon fillets evenly with 3/4 teaspoon of Seasonello fine sea salt and 1/2 teaspoon of pepper.
  3. Make the Herb Vinaigrette:
    • In a bowl, whisk together minced shallots, chopped parsley, thyme, chives, minced garlic, Dijon mustard, sugar, lemon or lime juice, Portuguese Cobrançosa EVOO, and the remaining 1/4 teaspoon of Seasonello fine sea salt.
  4. Grill the Salmon:
    • Coat the grill with a bit of oil to prevent sticking. Place the seasoned salmon fillets on the grill.
    • Grill the salmon for 5-7 minutes on each side, or until cooked to your desired doneness.
  5. Serve:
    • Once cooked, spoon a few tablespoons of the herbed EVOO mix over each salmon fillet.
    • Serve hot, accompanied by suggested side dishes like French-style mashed potatoes, salad, or grilled vegetables.
