Ingredients:
- 1 tablespoon uncooked sticky rice
- 2 tablespoons Jalapeno Fused Olive Oil
- 1 pound ground pork
- 1/4 teaspoon sugar
- 1 tablespoon fish sauce
- Juice of 1 lime
- 3 shallots, peeled and thinly sliced
- 3 scallions, chopped
- 1/4 cup cilantro, chopped
- 1/2 cup mint leaves, chopped
Instructions:
- In a dry wok or pan over low heat, toast the sticky rice grains, stirring continuously until they turn golden and fragrant, about 10 minutes. Grind the toasted rice to a coarse powder using a mortar and pestle. Set aside.
- Place the wok or pan back over high heat until smoking hot. Add the Jalapeno Fused Olive Oil and the ground pork. Stir-fry until the pork is browned and cooked through.
- Add the toasted rice powder, sugar, fish sauce, and lime juice to the pork. Stir-fry for another minute to combine the flavors.
- Add the chili (if using), shallots, scallions, cilantro, and mint to the pork mixture. Stir-fry for one more minute until everything is well combined and heated through.
