Stuffed Baked Salmon is a savory delight featuring tender salmon fillets stuffed with a flavorful mixture of Gordal olives, sundried tomatoes, spinach, red onion, and Feta cheese, baked to perfection and served hot over a bed of rice.
Ingredients:
- ¼ cup pitted Deliza Gordal Olives, chopped
- 1 red onion, finely chopped
- 4 oz chopped sundried tomatoes (about half a jar)
- 3 oz spinach
- ¼ cup Feta cheese
- Salt and black pepper, to taste
- 3 tablespoons Spicy Calabrian Pesto Infused Olive Oil
- 4 (6 oz each) skinless salmon fillets
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil and set aside.
- In a bowl, mix together the chopped Gordal olives, red onion, sundried tomatoes, spinach, and Feta cheese.
- Cut a slit horizontally in the center of each salmon fillet to create a pocket. Rub the inside and outside of each fillet with Spicy Calabrian Pesto Infused Olive Oil. Season both sides with salt and black pepper.
- Stuff each salmon fillet with the olive, onion, sundried tomato, spinach, and Feta cheese mixture.
- Arrange the stuffed salmon fillets on the prepared baking sheet.
- Bake in the preheated oven for 30-40 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve hot over rice or your favorite side dish.
