Tropical Grilled Chicken Wings with Mango Pineapple Salsa

This recipe creates a tropical twist on classic grilled chicken wings. The wings are marinated in a flavorful blend of soy sauce, balsamic vinegar, and cola, then grilled to juicy perfection. The refreshing mango pineapple salsa with a hint of chipotle adds a burst of sweetness and tang, making this a perfect dish for a summer barbecue.

Ingredients:

Wings:

  • 4 pounds chicken wings
  • 2 tablespoons garlic olive oil
  • 1/2 teaspoon black pepper
  • 1/2 cup blackberry ginger balsamic vinegar
  • 1/4 cup soy sauce
  • 1 tablespoon mustard
  • 1 can (12 oz) cola (Coke or Pepsi)

Mango Pineapple Salsa:

  • 1 pineapple, peeled, cored, and sliced
  • ½ sweet onion, chopped
  • 2 large mangoes, peeled and chopped
  • 1 Roma tomato, chopped
  • â…“ cup chopped fresh cilantro
  • ½ tablespoon chipotle infused olive oil
  • ¾ teaspoon salt
  • ½ tablespoon mango infused balsamic vinegar
  • ¾ teaspoon lime zest
  • 3 tablespoons fresh lime juice

Instructions:

  1. Marinate the wings: In a large zip-top bag, combine soy sauce, balsamic vinegar, black pepper, olive oil, cola, and chicken wings. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
  2. Prepare the salsa: Preheat a grill to medium-high heat (350°F to 400°F). Grill the pineapple and onion slices for 5 minutes, or until slightly charred but not cooked through. Chop them and place them in a large bowl.
  3. Whisk together the salsa dressing: In a separate bowl, whisk together chipotle infused olive oil, mango infused balsamic vinegar, salt, lime zest, and lime juice.
  4. Assemble the salsa: Add the chopped mangoes, tomatoes, and cilantro to the bowl with the grilled pineapple and onion. Pour the dressing over the salsa and toss to combine. Cover and chill the salsa until ready to serve.
  5. Grill the wings: Preheat an outdoor grill to medium heat. Remove the chicken wings from the marinade and pat them dry. Grill the wings, turning occasionally, for 25-30 minutes, or until cooked through and well browned.
